Recipe of the Week - Grilled Courgettes with Hummus

David Gillick’s simple 3 step recipe for Grilled Courgettes with Hummus is the perfect post training snack.

Ingredients (serves 5)

2 courgettes


2 tbsp melted coconut oil, rapeseed oil or olive oil

Hummus

 

Method:

  1. Cut the courgettes in half and then slice lengthways into strips 1cm thick. Place in a bowl with the oil and mix gently so that the courgettes are lightly coated in the oil.
  2. Heat a griddle pan over a medium heat and lightly fry the courgettes, turning them occasionally in order to get nice chargrilled strips.
  3. Transfer to a plate and spread each grilled courgette with a good dollop of hummus.
