Recipe of the week - Mixed Bean Salad

David Gillick’s easy 3 step recipe for a healthy Mixed Bean Salad is ideal for lunch on the go.

Ingredients (serves 4)

2 x 400g cans of mixed beans, drained and rinsed


250g cherry tomatoes, halved

2 spring onions, finely sliced

1 small bunch of fresh parsley leaves

Dressing:

2 tbsp olive oil

1 tbsp red wine vinegar

1 tsp wholegrain mustard

Method:

  1. Combine the drained mixed beans, cherry tomatoes, spring onions and parsley leaves in a large bowl.
  2. In a separate small bowl, whisk together the oil, vinegar and mustard.
  3. Add the dressing to the bowl of beans. Toss to combine and serve straight away.
