Ingredients; Makes 8 balls
50g porridge oats
30g shredded desiccated coconut, plus extra for coating
10g chocolate or vanilla-flavoured whey protein
4 tablespoons of good-quality low-sugar peanut butter
2 tablespoons of honey
1 tablespoon cocoa powder
Mix all the ingredients together in a bowl until well combined.
Divide into eight equal portions and roll into balls between the palms of your hands.
Sprinkle some extra coconut in a shallow bowl and roll the balls in it.
Chill until ready to eat.
Store in an airtight container in the fridge for up to five days.
